Our organic farmer cheeses are made with our farm’s AgroBoreal organic milk. Fabricated in an artisanal way, these high-end products are representative of the local food from the Lac-Saint-Jean area.

CHEESE CURDS

With their smooth, delicate and light flavour, as well as their subtle notes of butter and fresh cream, our unripened fresh cheddar cheese curds are very appreciated by consumers. They may be eaten informally and in all occasions.

Our aged and distinctive cheeses

In addition to our mild cheddar offered in slab our curd format, we create aged cheeses which distinguish themselves by their intensity and refined taste as well as by their degree of ripening.

To create our distinguished flavoured cheeses and to give them meaningful names, we inspired ourselves from the natural abundance of the Lac-Saint-Jean region, including the Ashuapmushuan River, a major river located right in front of our farm. Its name stands for there where we watch for the moose in the Innu language. Actually, in the past this river was the gateway to the north for the Native Americans and the French that were involved in the fur trade.

Interesting fact: our cheeses were named to salute the rapids and waterfalls of the Ashuapmushuan River. The more you go up the river, the stronger the waterfalls become. Hence, the cheese names correspond to the cheese flavours which become increasingly intense.

Our RAPIDE ARCAND cheese

The Rapide Arcand is the first obstacle in the region that explorers had to traverse on the fur trade route. We used it as inspiration to create a delicate and lightly acidulous cheese presenting a smooth texture and an aroma of butter, pear and almond.

Our CHUTE À MICHEL cheese

Just like the Chute à Michel is sprinkled with rapids, rocky islets and swells, our cheddar has an asserted and complex personality. Its aromas bring out hints of hazelnut and undergrowth while its texture is dry and its taste lingers.

Set in an enchanting site, the Chute à l’Ours consists of a long series of steep waterfalls, whirlpools, rocky capes and wooden islets. It has inspired this cheddar in its richness, its aromas and its undeniable gracious tasteIts aromas are both spicy and creamy and bring out perfumes of dried hay, undergrowth and fresh mushrooms.

Our CHUTE CHAUDIÈRE cheese

The fur trade route was not an easy route and its explorers soon had to face a difficult hurdle, the Chute Chaudière! This kilometer-long canal was carved right into the rock where the river has dug many cauldrons into the granite over time. At the output of this path, this natural beauty’s richness peaks into a boiling and roaring cascade. A richness that we find in this cheese’s taste, bringing intensity and subtle notes of dried hay, undergrowth and fresh mushrooms.

The outcome of five generations of perseverant farmers and growers is the 6+ years – Réserve Spéciale, with its unique and refined flavour.

Its taste starts with a sharp and fruity attack, followed by aromas of dry hay, undergrowth and mushrooms to end on a note of bitterness.

Our lactose free ST-FÉ cheese

For those native to the region, St-Fé is the nickname for St-Félicien. It is in honour of this city that this lactose free cheese was created.

Profoundly anchored in our area where nature dominates, this cheese requires a ripening period of 3 months and presents a smooth texture. With aromas that remind of cream and fresh almonds, this cheese is fitting for those that are lactose intolerant.

Created in 2015 to celebrate the St-Félicien’s city 150th anniversary, this cheese is coated in paraffin. Its ripening period is of 8 months, which allows the enhancement of its butter and fresh almonds flavours.
